Steps to preparing a perfect turkey: Buying a Safeway farms turkey: Recommended serving size is 1/4 to 1 lb per person. Thawing: Two methods are recommended. See below for thawing guide. Thawing Guide: 8-12 lbs: 2 days refrigerator (place in a pan); 4-6 hours cold water (cover with water). 12-16 lbs: 2-3 days refrigerator (place in a pan); 6-9 hours cold water (cover with water). 16-20 lbs: 3 days refrigerator (place in a pan); 9-11 hours cold water (cover with water). 20-24 lbs: 4 days refrigerator (place in a pan); 11-12 hours cold water (cover with water). Change water frequently (every 30 minutes) to assure safe thawing. Do not open protective bag during thawing. Do not thaw at room temperature. Do not refreeze thawed turkey. Preparing: 1. Remove thawed turkey from bag. 2. Remove giblet package located in neck or body. 3. Rinse inside and outside of turkey with cold water, drain and pat dry. 4. Loosely stuff body and neck cavity if desires. (Prepare stuffing ahead of time on a clean work surface.) 5. Roast immediately. 6. Wash hands, utensils and work area with hot soapy water before preparing other food products. Roasting: If you don't have a favorite recipe of your own, follow these steps to a perfect roast turkey. 1. Place thawed, prepared turkey breast-side up in a roasting pan. 2. Brush turkey with vegetable oil; season to taste. 3. Roast in preheated oven at 325 degrees F according to chart below. 4. When turkey is golden brown, cover loosely with foil. 5. Optional: Baste with pan drippings after 2 hours in the oven. This will lengthen cooking time. Roasting Chart: 8-12 lbs: 3-1/2 to 4 hours stuffed; 3 to 3-1/2 hours unstuffed. 12-16 lbs: 4 to 4-1/2 hours stuffed; 3-1/2 to 4 hours unstuffed. 16-20 lbs: 4-1/2 to 5 hours stuffed; 4 to 4-1/2 hours unstuffed. 20-24 lbs: 5 to 6 hours stuffed; 4-1/2 to 5-1/2 hours unstuffed. (Cooking time can vary due to equipment. For best results use a meat thermometer. Thermometer inserted into the innermost part of the thigh should read 165 degrees F. Always be sure turkey is thoroughly cooked; it should be easily pierced with a fork and the juices should run clear. Carving: Let turkey stand approximately 20 minutes before carving.
